Ingredients:
1 pound baby potatoes
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon chili powder
Salt and black pepper
1 tablespoon chopped fresh parsley
Instructions:
Preheat the oven to 400°F (200°C). Cut the baby potatoes in half and place them in a large bowl.
Drizzle the olive oil over the potatoes and toss to coat. Sprinkle with smoked paprika, chili powder, salt, and black pepper.
Place the seasoned potatoes on a baking sheet and roast in the oven for 20-25 minutes or until tender and golden brown.
Garnish with chopped fresh parsley.
