Legend has it that Torta Caprese was born out of a culinary mishap. In the 1920s, a talented pastry chef in Capri accidentally forgot to add flour while preparing a cake for three American tourists. Instead of starting over, he decided to bake the cake anyway, resulting in a delightful creation that captivated the palates of his guests. Thus, Torta Caprese was born, named after its place of origin.

The Essence of Torta Caprese:
At the heart of Torta Caprese lies its simplicity and elegance. This flourless chocolate almond cake is a testament to the beauty of using quality ingredients in their purest form. Ground almonds lend a delicate nuttiness to the cake, while premium dark chocolate infuses each bite with a luxurious depth of flavor. Torta Caprese: A Decadent Chocolate Almond Cake

Recipe for Torta Caprese

Ingredients

200g dark chocolate (preferably 70% cocoa), chopped
200g unsalted butter, cubed
200g granulated sugar
200g almond flour
4 large eggs, separated
1 teaspoon vanilla extract
Pinch of salt
Confectioners’ sugar, for dusting
Sliced almonds, for garnish (optional)

Instructions

Preheat your oven to 180°C (350°F). Grease a 9-inch round cake pan and line the bottom with parchment paper.
In a heatproof bowl set over a pot of simmering water, melt the dark chocolate and butter together, stirring until smooth. Remove from heat and let cool slightly.
In a large mixing bowl, beat the egg yolks and granulated sugar together until pale and fluffy. Stir in the vanilla extract.
Gradually pour the melted chocolate mixture into the egg yolk mixture, stirring until well combined.
Gently fold in the almond flour until just incorporated.
In a separate clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
Carefully fold the beaten egg whites into the chocolate-almond mixture, using a spatula to maintain the airy texture.
Pour the batter into the prepared cake pan, smoothing the top with a spatula.
Bake in the preheated oven for 40-45 minutes, or until the top is set and a toothpick inserted into the center comes out with moist crumbs.
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Once cooled, dust the top of the cake with confectioners’ sugar and garnish with sliced almonds if desired.
