Quiche with roasted peppers, tomatoes, and goat cheese is a delicious and savory dish that is perfect for breakfast, brunch, or dinner. The combination of the roasted peppers, tomatoes and tangy goat cheese make for a delicious, easy and versatile dish. Here’s a recipe for you:

Ingredients:

1 9-inch pre-baked pie crust
2 red bell peppers, roasted and diced
1 cup cherry tomatoes, halved
4 oz. goat cheese, crumbled
4 large eggs
1/2 cup heavy cream
1/2 cup whole milk
Salt and pepper, to taste
1/4 cup grated Parmesan cheese (optional)

Instructions:

Preheat the oven to 350°F (175°C).
Place the pre-baked pie crust on a baking sheet.
Spread the diced roasted peppers and halved cherry tomatoes on the bottom of the crust.
Sprinkle the crumbled goat cheese over the vegetables.
In a separate bowl, whisk together the eggs, heavy cream, and whole milk. Season with salt and pepper, to taste.
Pour the egg mixture over the vegetables and cheese in the crust.
Sprinkle the Parmesan cheese on top, if desired.
Bake the quiche for 35-40 minutes, or until the filling is set and the crust is golden brown.
Remove from the oven and let it cool for a few minutes before serving.
