Coq au Vin is a classic French dish that is made by braising chicken in a red wine sauce with bacon, mushrooms, onions, and other vegetables. The dish is typically served with a side of potatoes or rice and is perfect for a hearty and comforting meal. Here’s a recipe for you:

Ingredients:

2 lb chicken, cut into 8 pieces
Salt and pepper, to taste
2 tbsp olive oil
4 oz bacon, diced
2 onions, sliced
2 cloves of garlic, minced
1/2 lb mushrooms, sliced
2 cups red wine
2 cups chicken broth
2 tbsp tomato paste
1 tsp thyme, chopped
2 bay leaves
1/4 cup flour
1/4 cup butter, room temperature
2 tbsp parsley, chopped

Instructions:

Preheat the oven to 350°F (175°C).
Season the chicken with salt and pepper.
In a large Dutch oven or oven-proof pot, heat the olive oil over medium-high heat.
Add the bacon and cook until crispy.
Remove the bacon from the pot and set it aside.
Add the chicken to the pot and brown it on both sides.
Remove the chicken from the pot and set it aside.
Add the onions, garlic, and mushrooms to the pot and cook until softened.
Return the chicken and bacon to the pot, and add the red wine, chicken broth, tomato paste, thyme, and bay leaves.
Bring the mixture to a simmer and cover the pot.
Transfer the pot to the oven and cook for 1 1/2 hours, or until the chicken is cooked through.
Remove the pot from the oven and let it cool for a few minutes.
In a small bowl, mix together the flour and butter to make a paste.
Stir the paste into the pot to thicken the sauce.
Return the pot to the stove and simmer for an additional 10-15 minutes, or until the sauce has thickened.
Remove from the heat and let it cool for a few minutes.
Remove the bay leaves, and then add the parsley.
Serve and enjoy!
