Spicy Lemon-Cumin Rice with Peppers and Raisins

This spicy and tangy one-pot rice dish is infused with the warmth of cumin, turmeric, and chili, balanced by the sweetness of raisins and the brightness of fresh lemon. Perfect as a comforting main or side dish!

Spicy Lemon-Cumin Rice with Peppers and Raisins

Ingredients:
1 cup basmati or jasmine rice (rinsed and soaked for 20 minutes)
1 medium onion, finely chopped
3 garlic cloves, minced
1 medium carrot, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 small potato, diced (optional, for heartiness)
1 teaspoon ground cumin
1 teaspoon turmeric (curcuma)
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon paprika
1/4 cup raisins
Juice of 1 lemon
2 tablespoons olive oil or butter
2 cups vegetable broth or water
Salt and black pepper to taste
Fresh cilantro or parsley for garnish (optional)

Instructions:

Prepare the Base:
Heat the olive oil or butter in a large pot over medium heat. Add the chopped onion and garlic, sautéing until fragrant and golden. Add the cumin, turmeric, chili powder, and paprika, stirring to release the spices’ aroma.

Cook the Vegetables:
Add the diced carrot, bell peppers, and potato (if using) to the pot. Sauté for 5-7 minutes until the vegetables soften slightly.

Add Raisins and Rice:
Stir in the raisins, allowing them to plump up slightly in the heat. Then, add the soaked and drained rice, stirring to coat the grains in the spice and vegetable mixture.

Simmer with Broth:
Pour in the vegetable broth or water. Add salt and pepper to taste. Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is fully absorbed.

Finish with Lemon:
Once cooked, fluff the rice with a fork. Squeeze in the juice of one lemon for a bright, tangy finish. Adjust seasoning as needed.

Serve:
Garnish with fresh cilantro or parsley for an added touch of freshness. Serve hot as a standalone dish or pair with yogurt, salad, or grilled meats for a complete meal.
