4 cups mixed greens (arugula, spinach, lettuce)
1/2 cup pomegranate seeds
1/4 cup crumbled feta cheese
1/4 cup sliced almonds
2 tablespoons balsamic vinegar
2 tablespoons olive oil
Salt and black pepper
In a large bowl, mix together the mixed greens, pomegranate seeds, crumbled feta cheese, and sliced almonds.
In a small bowl, whisk together the balsamic vinegar and olive oil. Season with salt and black pepper.
Drizzle the dressing over the salad and toss to coat.
Serve alongside the roasted chicken and chili paprika potatoes.
